Emerald – contemporary vegan cuisine

珺 means Emerald in English. It also signifies resilience, beauty, and innocence.

Emerald serves modern Chinese vegetarian cuisine, with creative immersion in Western ingredients and cooking styles such as molecular cooking and French plating.  Each dish is carefully crafted by our chef with heart and passion so our guests can enjoy the ultimate taste and presentation of a healthy food experience that’s filled with surprise and delights.

Michael Kong (head chef), became a vegetarian almost 20 years.  Mr. Kong is passionate about vegetarian cuisine, having studied and exchanged in Shanghai, Taiwan, etc, about plant-based ideas.  He had worked at several vegetarian restaurants for over 30 years and started his first vegetarian restaurant in 2020.
